You ask why supercritical?
You pressurise pure carbon dioxide to the point of 'criticality' and it'll behave like a liquid and a gas simultaneously. That's a cool thing. Why are we talking about it when we're trying to sell you a gin? Well, at that point of criticality, the CO2 can permeate botanicals like a gas, but also dissolve their essential oils like a liquid. When you lift the botanicals out and the pressure is released, the pure CO2 evaporates, leaving only the crystal-pure essential oils, and it's done all this without introducing any destructive heat.
